Why east Asian is called “ese” in English?

The suffix “-ese” originates from the old French suffix “-eis” (in modern day French, this is either “-ois” or “-ais”). The French themselves took this from the Latin word “ensem” meaning “belonging to” or “orginating in.” Therefore, when combined with certain country names, an adjective is formed denoting place of orgin, language, or style. The suffix has nothing to do with sounding like the word “east.” This is completely illogical especially considering that English is a Latin based language with heavy Germanic influences.
