Greek Style Tzatziki Recipe

Here is a really quick and easy tzatziki recipe all the way from Greece! Tzatziki is a great starter for summer dinners or it can be served as a party snack. Just whip this dip together, serve with some toasted pita bread, bread sticks or even some toasted ciabatta bread (Italian meets Greek) and watch is disappear.
This recipe is really tasty and refreshing and so simple to throw together. Everything gets chopped up and mixed together with creamy, thick Greek yoghurt. Then all that is left to do is keep it chilled until your guests arrive. As simple as that, absolutely no cooking is required! So keep this tzatziki recipe close on hand for those gorgeous summer nights or a spontaneous party with friends.
Tantalizing Tzatziki Recipe
(serves about 8)
Ingredients:
• 600ml of Greek yoghurt (this is a very thick and creamy yoghurt)
• 1 cucumber chopped into small pieces (you can trim a bit of the skin off before chopping)
• 2 finely chopped cloves of garlic
• 8 finely chopped spring onions
• 5 table spoons of finely chopped fresh mint (and extra to garnish)
• Salt and freshly ground pepper to taste
Instructions:
1. Using a fork or a whisk beat the yoghurt in a mixing bowl until it is smooth.
2. Mix the cucumber, garlic, spring onions, mint, salt and pepper into the smooth yoghurt.
3. Transfer the dip into a serving bowl, cover it with cling wrap and keep it in the refrigerator until it is needed.
4. Before serving, garnish the dip with some mint and then serve with pieces of toasted pita bread and/or bread sticks.
